Sort of a cross between cheese and caramel. Deep brown with an oily surface and smooth texture. Distinctive rich flavor, sweet and somewhat sour. Very good in thin slices.
I was forced to try this upon your review. I agree, the thinner the slices, the better -- I'm inclined to get a good cheese planer just to improve my enjoyment of this. It really is unlike any cheese I've ever had before, and makes a good breakfast snack on the way out the door.
As an aside, have you had a chance to sample Alsatian Munster yet? One of the most pungent washed rind cheeses out there, it goes well with cardamon spices and a medium-dry white wine (I recommend a dry Riesling).
